Thanksgiving dressing is a must for the holidays. This is a really simple recipe that will save you time in the kitchen.
3 ribs of celery
1/2 medium onion
1 stick unsalted butter
1 14.5 oz can chicken broth
1 bag Pepperidge Farm seasoned bread cubes?
5 green onions
2-3 tablespoons leftover bacon grease or olive oil
2 boxes Jiffy cornbread prepared per box instructions
In a food processor, chop celery and onion. Will produce about 2 cups of mixture.
In a pan over medium heat, add the mixture into 2-3 tablespoons bacon grease or olive oil and cook until tender crisp about 3-4 minutes.
Add butter and heat until melted. Turn heat off.
In a mixing bowl, add crumbled cornbread. Add in 2 eggs mix briefly. Add in celery/onion/butter mixture. Lightly mix. Add chicken broth and mix lightly.
Add in seasoned breadcrumbs and mix to combine. Add green onions.
Pour mixture into a 9x13 baking pan. Spread evenly.
Bake uncovered in a 350 degree oven for about 30 minutes or until top slightly browned.
