15-Minute Enchiladas

In a hurry? Try this quick and easy weeknight meal!


INGREDIENTS:

1 15 oz. can Wolf Brand Chili no beans (or preferred kind)

1/2 can water (about 1 cup)

1 lb. shredded medium cheddar cheese

24 corn tortillas








STANDARD PREP INSTRUCTIONS (30 minutes):

  1. Preheat griddle or pan.

  2. Heat chili in a small saucepan and shred your cheddar cheese.

  3. Warm the corn tortillas for rolling.

  4. Sprinkle cheese on tortilla and roll them into an oven proof pan.

  5. Pour chili over your rolled enchiladas and sprinkle more cheese over the top.

  6. Bake in the oven at 325 degrees for 15- 20 minutes until heated through and cheese is melted.


QUICK AND EASY ALTERNATIVE (15 minutes):

  1. Preheat griddle or pan.

  2. Heat chili in a small saucepan and shred your cheddar cheese.

  3. Warm the corn tortillas for rolling.

  4. Sprinkle cheese on tortilla and roll them onto your serving plates.

  5. Pour chili over your rolled enchiladas and sprinkle more cheese over the top.

  6. Heat each serving in the microwave for 45 seconds-1 minute until cheese is melted.
